Discovering Tuscan
Olive Oil

Forget anything you’ve tasted from a supermarket shelf. Tuscan olive oil is bold and layered, with a signature peppery bite, locally known as pizzicante, an earthy undertone, and a spicy finish that lingers long after the first sip. According to olive oil experts, Tuscan oils are especially rich in polyphenols, the antioxidants responsible for both their signature bite and many of their health benefits. Fresh oil pours a vivid green and carries a richness that instantly elevates whatever it touches.

tuscan olive season

Every autumn, as the Tuscan countryside turns to gold, an ancient ritual unfolds.

The olive harvest has shaped this region for generations, pulling families, farmers, and curious visitors alike into groves warmed by the late-season sun.

Each year, the harvest, known locally as la raccolta, typically runs from mid-October to early December, making autumn the very best time to witness this centuries-old tradition come to life across the groves.

The beauty of the harvest

The scent of freshly picked olives hangs in the air, voices carry between the rows of ancient trees, and Tuscany begins its yearly work of turning fruit into something extraordinary: extra virgin olive oil.

Our own olive groves contain over 300 trees biodynamically planted loving looked after by their owners, they produce the best  organic extra virgin olive oil you will find hard to find. This is what i served on our breathe Tuscany dining table purity you can taste.

a flavour unlike any other

Nearly all Tuscan olive oil earns the extra virgin label, the highest classification available, reserved for oil pressed from the first extraction and containing minimal acidity. No chemicals, no refining, no shortcuts. Just olives, pressed with care.

Often called “liquid gold,” Tuscan olive oil has earned its reputation the hard way through flavour, quality, careful production, and a tradition that stretches back thousands of years.

where Tradition Meets Precision

Little has changed in how we harvest these olives. Handpicking, or gentle mechanical methods, stop the fruit from bruising or being damaged. Speed matters too, olives are typically picked slightly underripe and pressed within hours, locking in freshness before it has a chance to fade.

Shaped by the Land Itself

Just as even in Italy the term terroir defines a great wine, Tuscany’s landscape or terreno, defines its oil. A Mediterranean climate gives olive trees exactly what they need to flourish, while the region’s rolling hills with their shifting altitudes and mineral-rich, well-drained soil adds depth and nuance you simply can’t replicate elsewhere.

A Legacy Older Than You'd Think

This isn’t a modern trend it’s history. Tuscan olive oil production has been studied to preserve its cultural heritage across the Mediterranean, as its roots trace back to the Etruscans and Romans. That legacy lives on today, as families continue to use the same methods used in Etruscan and Roman times, methods passed down through countless generations, bottle after bottle.

Taste It for Yourself

Stay with us in Tuscany, and you won’t just hear about this tradition you will taste it, straight from the organic and biodynamic olive trees surrounding your retreat farmhouse. Each drizzle carries the story of the land and the people who’ve cared for it for centuries.
